Wash the vegetables and chop into small pieces. Then put
them into a large glass mixing bowl with some brine and leave
overnight. After this rinse well in cold water and drain.
Then cut the celery into small pieces.

Preparation and cooking instructions
In a non-reactive pan bring the vinegar, sugar and spices
to the boil then add the chopped vegetables plus small cucumber
pickles that have been in brine overnight.
Cook for half an hour; then mix the turmeric, the ground
mustard and the flour to a paste and add to the pan. Cook
for a further five minutes. Bottle and eat when liked.
