Recipe Ingredients
2 oranges
6 lemons
2 pints water
4 cups sugar
6 egg whites
Preparation and cooking instructions
To the water add the sugar and bring to the boil. Then allow
to cool before straining. Next add the orange and the lemon
juice; then put the syrup in the freezer in a suitable container.
Now beat the egg whites until they’re stiff, then add
these to the syrup. Freeze stirring constantly until the ice
is sufficiently frozen.
Alternatively for Apricot Ice make the syrup as above but
add one can of apricots (crushed) or apricot puree, plus the
juice of one orange and three lemons. Freeze as for Orange
and Lemon Ice
Caution: raw eggs or recipes containing raw eggs should not
be eaten by pregnant women, babies, young children and the
elderly or by anyone whose health is compromised.
Sherbet Lemon
Ingredients
3 Lemons
1 pint sugar
2 pints milk
2 beaten egg whites
Method
To the milk add the sugar and the beaten egg whites. Place
in a suitable container in the freezer, and when the ice begins
to freeze add the juice of the lemons.

elderly or by anyone whose health is compromised.
