Recipe Ingredients
Clear soup
1 tablespoon potato flour
1 tablespoon béchamel sauce
1 egg
¼ lb forcemeat
Stock
Peas
Asparagus
Potato flour
Spinach
Preparation and cooking instructions
First mix the forcemeat with the potato flour, the béchamel
sauce and the yolk of an egg. Now put this into a tube about
the size round of a macaroni.
Then twenty minutes before serving, nipping off the forcemeat
as it comes through the pipe into pieces of about an inch
and a half in length, squirt the forcemeat into a saucepan
of boiling stock. Then let it simmer and add boiled peas and
asparagus tips.
Serve in a clear soup
note: If you would like to have the forcemeat white and green
color half of it with a spoonful of spinach.
