Recipe Ingredients
Truffles
6 eggs,
½ stick of butter,
2 tablespoonfuls cream
White sauce – made with stock
Croutons
Preparation and cooking instructions
Begin by beating together 6 eggs; then pass them through
a sieve. Now pour them into a saucepan and add the butter
and the cream. Next put the saucepan in a bain-marie and stir
so that the eggs do not stick.
Sauté some truffle slices in butter. Now cover them
with the sauce and a glass of Marsala, then add to the egg
mixture. Serve very hot with glazed and fried croutons.
Alternatively replace the truffles with cooked ham asparagus
tips or peas.
