To make use of left over risotto you can make it into little
balls, dip the balls into beaten egg, roll them in breadcrumbs,
fry them in butter, drain them on paper towel pop them in
hot soup, and serve with slices of thick crusty bread.

Rice
Butter
1 small onion
¾ pint stock
3 medium sized tomatoes
2 tablespoons of grated Parmesan and Cheddar cheese
Preparation and cooking instructions
Begin by boiling the rice, but don’t let it get mushy,
and pureeing the tomatoes. Then chop up a small onion and
lightly fry it in a little butter.
Next add half a pint of the stock to the fried onions followed
by the rice and the pureed tomatoes. Stir together add a little
more stock and the grated cheese. Serve hot.
