Fillet of Sole

Recipe Ingredients

Sole fillets
Anchovies
2oz (½ stick) butter
Bacon
Onion
Stock
Chablis
Salt
Nutmeg
Parsley
1 bay leaf
Spanish Olives

Preparation and cooking instructions

In each fillet of sole place a piece of anchovy. Then tie up the fillets and put them in a sauté-pan with the butter, a slice of bacon or ham and a few slices of onion. Then over this pour enough stock with a glass of Chablis to half cover. Next, to taste, add a little salt and nutmeg, parsley and the bay leaf. Now cover with buttered wax paper and cook slowly for about an hour.

After this drain the fish and pass the liquor through a sieve. Then reduce to the consistency of a thick sauce before pouring it over the fish. Garnish each fillet with a stuffed Spanish olive.
