Recipe Ingredients
Capon chicken
Veal forcemeat
Fatty Bacon
Stock
4 oz rice
Milk
Mushrooms
Kidneys or chicken livers
Supreme sauce
Chablis
Truffles
Preparation and cooking instructions
First stuff a capon chicken with a good firm forcemeat made
of tongue, ham, veal and chopped truffles. Next cover the
capon with fatty bacon and tie it up in buttered paper. Then
cook in a white stock.
Meanwhile boil the rice in some milk until stiff, then stir
in some chopped truffles; from this make ten little timbales.
When the capon is cooked through place it on a dish and garnish
with cooked mushrooms, kidneys, or chicken livers, then over
this pour a sauce supreme. Now place the timbales of rice
around the dish and between each timbale put a whole truffle
previously cooked in white wine.
Serve additional sauce in a sauceboat.
