Preparation and cooking instructions
First prepare the salmon fillets; then spread them with
the fish forcemeat. Next separately cook some mixed diced
vegetables; and then with these garnish each fillet. Next
cook them in a covered stew pan.
After this put a crouton of bread in an entree dish and garnish
with cooked peas mixed with béchamel sauce, stock and
butter. Then around this place the cooked fillets of fish,
leaving the center with the peas uncovered. Pour some rich
Spanis sauce around the fillets and serve.
