Recipe Ingredients
¼ cup butter
2 egg yolks
1 tablespoonful lemon juice
Cayenne
Salt
2 tablespoonfuls of boiling water
Preparation and cooking instructions
First heat a bowl with boiling water, then wipe it dry.
Now put the butter into the warmed bowl and cream (beat).
Next add the egg yolks one at a time and beat until smooth.
Now add the lemon juice, the cayenne and the salt and beat
the mixture - with a fork or an eggbeater - for five minutes.
After this carefully set the bowl over a saucepan of boiling
water and stir into the sauce two tablespoonfuls of boiling
water then beat until the sauce is smooth and thick –
the consistency of mayonnaise.
