Recipe Ingredients
1 onion
Butter
Ham
Marsala
White veal sauce
Thyme
Bay leaf
4 peppercorns
1 clove
1 tablespoon of cut mushrooms
2 cups Espagnole sauce
1 cup tomato sauce
½ cup stock
Preparation and cooking instructions
First fry an onion in butter with some bits of cut-up ham.
Then over this pour a glass of Marsala and another of white
veal sauce; then add a sprig of thyme, a bay leaf, peppercorns,
a clove, chopped mushrooms and reduce the sauce to half.
In another saucepan put the Espagnole sauce together with
the tomato sauce and the stock, and reduce a third. Then add
the contents of the first saucepan. After this boil the sauce
for a few minutes, then pass through a sieve.
Reheat in a bain-marie before serving.
