Preparation and cooking instructions
Begin by pounding the veal in a heavy bowl. Then add the
cooked ham the yolk of an egg, salt, pepper and a tiny amount
of nutmeg. After this pass through a sieve.
Next slice some small French rolls, spread with the veal
mixture then brown in the oven. Then cut them into quarters
or halves, put them into a tureen, and just before serving
pour over them a clear soup.
