Recipe Ingredients
The juice of 3 lemons
2 teacups of sugar
Gelatin
1 pint of cold water
½ pint of hot water
4 egg whites
Preparation and cooking instructions
First put the gelatin into a saucepan with 1 pint of cold
water and leave for 10 minutes. Then gently dissolve over
a low heat. Now add the lemon juice together with the hot
water and the sugar and bring to the boil. Continue to boil
for 2 to 3 minutes. After this pour the mixture into a bowl
and leave until it is cool and just about set. Meanwhile whisk
3 egg whites.
When the lemon mixture is cool add the 3 beaten egg whites
and whisk for about 10 minutes or until the mixture is the
consistency of a sponge. Now beat the fourth egg white and
with this wet the inside of some small molds. Now pour the
lemon snow sponge mixture into the molds and leave to set
in the refrigerator.
Serve with thin custard made from the yolks of 4 eggs, ½
teacup of sugar, 1 tablespoonful of cornstarch, 1 pint of
milk and a teaspoonful of vanilla, boiled until sufficiently
thickened; and when cold served poured over the lemon snow
sponges.
Caution: raw eggs or recipes containing raw eggs should not
be eaten by pregnant women, babies, young children and the
elderly or by anyone whose health is compromised.
