Recipe Ingredients
1 cup flour
¼ cup butter
3 egg yolks
Forcemeat
Gravy or stock
Parmesan cheese
Pinch of salt
Preparation and cooking instructions
First make a paste with the flour, 2 egg yolks a pinch of
salt and the butter; then knead into a firm but smooth paste.
Now wrap in a damp cloth and leave for about half an hour.
After this roll out the paste as thinly as possible on a
lightly floured surface; then moisten with a pastry brush
dipped in water. Now cut into circles about 3 inches across.
Next put the forcemeat into a bowl and mix with a little
grated Parmesan and the yolk of 1 egg. Now put about one teaspoonful
of the forcemeat mixture in the center of each circle; then
fold the paste over the forcemeat and pinch the edges together
so that they look like little semi-circle parcels. Leave to
dry.
When dry carefully pop them into a saucepan of boiling stock
and blanch for 15 minutes; then drain on paper towel. Now
butter a heatproof dish and arrange a layer of the little
ravioli parcels on the bottom; then sprinkle with a little
Parmesan. Next on top of this arrange a second layer of ravioli
parcels and again sprinkle with Parmesan. Now add enough gravy
to cover, and bake for about 25 minutes.
