Devil for Poultry or Boiled Ham
|
Recipe Ingredients
½ a teacupful of soup stock
3 ounces (¾ stick) of butter
1 teaspoonful of salt
1 teaspoonful of made mustard,
2 teaspoonfuls of French mustard,
2 cloves of garlic – finely chopped
1 chopped onion
2 green peppers
1 chopped pickled gherkin
1 peeled and cut up tomato
The juice of ½ a lime
½ a lime cut into thin slices
1 tablespoonful of Worcestershire sauce
1 tablespoonful of Imperial sauce
1 tablespoonful of tarragon vinegar
2 tablespoonfuls of chutney
½ a pint of sherry
Preparation and cooking instructions
In a large saucepan put the soup stock together with the
butter, the salt, the made mustard, the French mustard, the
finely chopped cloves of garlic, the chopped onion, the green
peppers, the chopped pickled gherkin, the peeled and cut up
tomato, the juice of half a lime and the sliced half of lime;
and simmer for one hour
Then after one hour add the Worcestershire sauce, the Imperial
sauce, the tarragon vinegar, the chutney and the sherry. Then
simmer for fifteen minutes.
This should keep for several months.
