concentrated chicken stock

Preparation and cooking instructions
Begin by putting three-quarters of a pint of white sauce
into a saucepan, then when it’s just coming to the boil
add the chicken stock. Reduce until the sauce is quite thick.
Then just before serving pass it through a sieve into a bain-marie.
Then add two tablespoonfuls of cream.
