Recipe Ingredients
3 heads of celery
Salt
Cayenne
Mace
2oz butter rolled in flour
½ a cup of cream
Veal stock
Preparation and cooking instructions
In a stew pan put a blade of mace, together with three grated
heads of celery, a little cayenne and a little salt. Now cover
with boiling water; then boil for ten minutes and drain. After
this return to the heat with enough veal stock to cover the
celery and stew for half an hour. Then add the butter rolled
in flour and the cream; shake over the heat for a minute or
two and serve.
