Recipe Ingredients
Wax beans
Salt pork
Bacon
½ pint of vinegar
1 spoonful of sugar (optional)
1 onion – finely sliced
Preparation and cooking instructions
First cook the wax beans in a little salted water with one
or two pieces of salt pork. Then, when the beans are tender,
take out and drain.
Next brown a few bits of bacon in a non-reactive skillet,
then add ½ pint of vinegar and a spoonful of sugar
(omit the sugar if liked); and let it boil, then add the finely
sliced onion. Before serving pour over the beans and mix well.
