Tea

Preparation and cooking instructions

Fill your kettle with freshly drawn cold water from the faucet (tap). When the kettle is nearly boiled pour a little water into a glazed china teapot and swirl the water around to warm the pot.
Continue to let the kettle boil and empty the teapot. Into the teapot put a half to one teaspoonful of English breakfast tea for each person to be served plus one teaspoonful 'for the pot' and fill with the just boiled water.
Allow the tea to brew for approximately three to five minutes, then with a spoon agitate the tea, do not stir the tea in the pot. There is an old English proverb that says 'If you stir the pot then you stir your troubles'.
Then using a tea strainer pour into cups. If you take milk in your tea add this to the cup.
Alternatively you can use teabags.
Tip: When serving afternoon tea a tablecloth, a vase with a bunch of fresh flowers and paper doilies for the plates on which you serve your cakes will make the occasion a little extra special.
