Begin by seasoning the chicken joints with salt and pepper.
Next in a small bowl beat the egg and in a second bowl mix
together the breadcrumbs and the chopped parsley.
Dip the chicken joints into the beaten egg and then the breadcrumbs
and parsley. Dip for a second time in the beaten egg and then
the breadcrumbs, ensuring that the joints are well coated.
Fry for approximately ten to fifteen minutes in hot oil.
