Recipe Ingredients
6 oz softened butter
4 oz superfine sugar (caster sugar)
2 eggs
8 oz cornstarch (cornflour)
1 teaspoonful baking powder
1 tablespoonful milk
Half a teaspoonful of vanilla extract (vanilla essence)
Food coloring
Patty cases (paper cases)
This recipe will make approximately 28 little cakes
Preparation and cooking instructions
Beat together the butter and sugar until it is of a creamy
consistency. Adding the eggs one at a time beat the mixture
well. Next add the milk and the cornstarch and beat for a
further five to ten minutes. Less if you are using a handheld
mixer (whisk), or an electric handheld mixer. Add to this,
the baking powder and the vanilla extract and mix together
thoroughly. Now add the food coloring using enough food coloring
to make the cakes a definite color. Or if you would like some
cakes one color and the rest another color before adding the
food coloring divide the mixture into different bowls. If
you would like to achieve a marble effect for your colorful
cakes after adding the food coloring stir a few times so that
the mixture looks marbled and not all one color.
Put one generous teaspoonful into each patty case and sprinkle
superfine sugar on the top of the cakes then bake for approximately
20 minutes at 375°F (190°C).
You can use any color food coloring that you wish for your
cakes, try pink, blue or if you have a little monster, green.
If you prefer rather than sprinkling superfine sugar on top
of the cakes you can ice them. Here’s how:
Into a bowl put some powdered sugar (icing sugar) and then
pour on a little hot water from the kettle. Use enough hot
water to make the icing of a smooth consistency. If you think
that you have added too much water just add some more powdered
sugar (icing sugar) and mix. You can either use the icing
as it is ie white or use a little food coloring and if you
wish a little flavoring. To make it easier to spread the icing
on the cakes first dip a knife in hot water.
