Asparagus with Parmesan

Recipe Ingredients

Asparagus
Shredded (grated) Parmesan cheese
Salt and pepper
Cayenne
Butter
A little melted butter
Eggs (one per serving)

Preparation and cooking instructions

Preheat the oven to 350°F.
Grease ovenproof serving dishes with butter. Remove the woody part and then wash the asparagus in cold water. Put the asparagus into a saucepan of boiling salted water and gently simmer until tender. Place six asparagus stalks into each of the prepared ovenproof serving dishes and sprinkle with Parmesan, salt, pepper and cayenne. Pour over a little melted butter and crack one egg onto each serving. Place in the oven and cook until the eggs are just set. Serve.
