Recipe Ingredients
Serves Six
3 ripe avocados
3 fluid ounces of mayonnaise
6 oz cooked peeled and chopped shrimps
1½ tablespoons of lemon juice
Crisp lettuce leaves
Cilanrto or coriander
Avocado with Shrimps Preparation
In a bowl mix together the chopped shrimps with the mayonnaise.
Chill until needed. Rinse and dry the lettuce leaves and arrange
on six individual serving plates. Just before serving cut
the avocados in half and remove the stones.
Sprinkle the avocados with lemon juice and then spoon the
shrimp mixture into the hollows. Place one avocado half onto
each bed of lettuce leaves. Garnish with cilanrto or coriander.
Serve.
Note: An avocado once cut will discolor quickly, therefore
whenever possible cut just before serving.
