The ingredients for a Caesar Salad will often include coddled
eggs, these are eggs which have been very, very lightly cooked,
in fact almost raw but they are not essential to the dish.
You will however need a crisp lettuce; a Romaine lettuce is
often chosen for this recipe. The proportions of the other
ingredients listed here are a guide only and can be adjusted
to suit your taste.
Recipe Ingredients
This recipe serves six
Crispy lettuce leaves
About half a cup of olive oil for the dressing, and some for
frying
Half a cup of lemon juice
Half a cup of shredded (grated) parmesan cheese
A crushed garlic clove
French bread or white bread cut into small cubes, for croutons
Salt and ground black pepper to season
Anchovies drained and chopped (optional)
Caesar Salad Preparation
Tear the lettuce leaves and place them in a large bowl. Gradually
sprinkle the olive oil over the leaves, lightly tossing after
each addition until the leaves are coated, but not soaked.
Season with salt and pepper and drizzle over the lemon juice,
toss again. Add the anchovies and parmesan cheese and toss
the salad carefully together until the ingredients are evenly
combined. Divide between six serving plates.
Heat some olive oil in a frying pan, add the garlic followed
by the bread cubes. Fry until golden and then drain the croutons
on paper towel. Sprinkle the croutons over the prepared Caesar
Salad. Serve.
Note: If you would like to add 2 coddled eggs to this recipe
then these should be added after seasoning but before the
lemon juice.
