Recipe Ingredients
Half a pound of cherry tomatoes
Half a cup of fresh basil leaves
One garlic clove
One tablespoon pine nuts
Five tablespoons of olive oil
Salt
Three tablespoons of a mixture of Parmesan and pecorino cheese
or all Parmesan
Ground black pepper
Preparation and cooking instructions
Begin by washing the cherry tomatoes and drying on paper
towel. Then cut a slice from the stalk end, carefully scoop
out the seeds and drain the tomatoes. Put the basil, garlic,
pine nuts, olive oil and salt into a blender or food processor.
Blend until smooth. Transfer to a bowl, stir in the cheese
and season with pepper. Fill each tomato with the pesto. Chill.
