This recipe is ideal for making cookies in shapes, such as,
teddies, duckies or bunnies for a baby shower, hearts or bells
for a bridal shower, for a birthday party the birthday boy
or girl's age, and stars for any occasion.
They can be left plain or decorated with icing and 'silver balls'
or other decorations.
If the cookies are to be in the shape of a cute little animal a
small currant could be used as an eye, this should be positioned
on the cookie before baking.
Recipe Ingredients
2 cups (8oz) all-purpose flour
¼ teaspoon baking powder
A pinch of salt
4oz superfine sugar
4oz soft margarine
½ a beaten egg (beat a whole egg and divide)
Icing
About 2 cups sifted confectioners’ sugar (powdered sugar)
About 2-3 tablespoons of tepid water
Food coloring
Preparation and cooking instructions
Grease or line a baking sheet. Preheat the oven to 300°F.
Begin by sifting together the flour, baking powder and salt.
In a second bowl beat together the sugar and the margarine
until pale and creamy, then add half an egg.
Mix in the flour. The mixture should be stiff enough to roll
out. Roll out quite thinly, on a floured surface. Dipping
the cookie cutter into flour from time to time, cut into shapes.
Place the cookies on the prepared baking sheet.
Bake the cookies for approximately fifteen minutes or until
pale gold. Leave on the baking sheet to cool a little before
transferring to a wire rack.
Icing.
Sift the confectioners’ sugar into a bowl. With a wooden
spoon, gradually stir in sufficient tepid water to make an
icing that is smooth and will thickly coat the back of the
spoon. If the icing is too runny just add a little more confectioners’
sugar; too thick? just add a little more tepid water. Use
the icing white or add food coloring. |
